Berries & cream oatmeal!




Good morning, lovelies!

Today I want to share with you one of my favorite breakfast recipes! I started making this a few years ago when I switched to plain, old fashioned rolled oats instead of flavored, packaged oatmeal, and my regular oatmeal got to be a bit too boring! This recipe is full of antioxidants, fiber, protein, and probiotics to keep you full, satisfied, and bursting with energy!

Ingredients:

  • 1/2 c. plain 100% rolled oats
  • 1 c. water 
  • 1/4 c. frozen blueberries
  •  1/4 c. frozen raspberries
  •  3 large fresh strawberries
  •  Dash of salt
  •  2 tsp.'s ground cinnamon  (optional)
  • 1/2 c. Stoneyfield Organic French Vanilla Lowfat yogurt


Directions:

1) Bring a medium saucepan with 1 c. of water, 1/4 c. of each frozen raspberries and blueberries, and a dash of salt to a rolling boil over medium heat.




2) Add in 1/2 c. of rolled oats. Cover the mixture and allow it to cook over medium heat for about 5 minutes, stirring occasionally.



My reflection made it into the picture. Haha!


3) When the oats appear to have absorbed 95% of the liquid, turn off the burner and pour the mixture into a medium-sized bowl to cool for a minute or two. In the meantime, cut up your 3 large strawberries into bite-sized chunks to be topped over your oatmeal! :-)




4) Add in your 2 tsp.'s of cinnamon if desired, stir, top with your chunks of fresh strawberries, and 1/2 c. of cool french vanilla yogurt.
