Healthy Homemade Italian Pizza Pinwheels & Marinara!


Hello, ladies! Today I wanted to share with you one of the recipes that my family loves! It is a recipe that I started to make when pizza got too boring. haha! It is super easy and can be made with less than 10 ingredients and in under 30 mins.!


Ingredients:
  • Store bought whole grain or white pizza dough (makes things a lot quicker here!)
  • A can of crushed tomatoes & italian seasoned diced tomatoes
  • 1 bag of baby spinach
  • Ham, proscuitto, or pancetta (Italian bacon)
  • Shredded mozzarella cheese & parmesan
  • Salt/pepper, basil, oregano, sugar, garlic (for the sauce)
  • & Olive oil! 

I love making this recipe because it is quick, fun, and can be tailored easily to suit different taste buds! For instance, my mother doesn't eat pork, so I cut a small portion of the dough away to roll up without bits of ham. I also love to make my own sauce to go with this. Besides, why buy store bought sauce when you can make your own?!


Directions:

1) Roll out your pizza dough into a large oval or rectangular shape (I like to use oval for this, but feel free to use what suits your preference!).

2) Preheat oven to 400 degrees F & have a foiled and greased cookie sheet handy. Saute your ham, proscuitto, or pancetta in olive oil ( the proscuitto can be left alone is you wish, but definitely saute the ham or pancetta!), and cut up into tiny bits. Top dough with your choice of meat & some chopped up baby spinach!

 3) Season w/ salt & pepper and then top w/ shredded mozzarella and some parmesan.




4) Now roll up your dough into a long roll. Coat in olive oil, season w/ salt & pepper, and sprinkle w/ a generous amount of parmesan!


5) Place on greased cookie sheet and pop in the oven for 15-20 mins or until outside is golden brown and dough is cooked through.

  • Now in the meantime, grab your 2 cans of tomatoes, 5-6 garlic cloves, seasoning, and olive oil to make your quick marinara!


 6) Cut up 6 med. cloves of garlic into thin slices or minced, whichever you prefer, and saute in some olive oil in a sauce pan on med. high heat.


 7) Add your can of crushed tomatoes and then your can of Italian diced tomatoes. Season w/ 1-1 1/2 T salt, 1/2-3/4 T sugar (depending on how sweet you like your sauce), black pepper, and about 2 tsp. of each oregano, & basil. Then stir!


8) Cook on med. high heat, covered for about 10 mins. and walla! Quick homemade marinara at your dispense!


9) When your pizza roll comes out of the oven, allow it to cool for 1 minute and then cut it into 1 inch slices to form the pinwheels before the dough gets cool and crisps up. Serve with the marinara as a dipping sauce or ladle it over each pinwheel to be eaten with a fork & knife!
