Homemade banana muffins with chocolate chips!




Good afternoon, everyone!

Today I want to share with you one of my favorite muffin recipes! These are great for taking on-the-go, eating with breakfast, or for a mid-morning, healthy snack! I have been making banana bread and banana nut bread for years, and have made this recipe out of boredom. I turned my bread recipe into a muffin recipe and they have been a hit ever since! They are moist, delicious, filling, & nutritious (hey, that rhymed!), and great to help satisfy any sweet cravings that you may have. :-)

What you'll need:

  • 1 2/3 c.'s whole wheat flour
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  •  3/4 c. brown sugar
  •  1/3 c. natural applesauce
  •  3 egg whites
  •  2-3 bananas, mashed
  •  1/3 c. water
  • 1 c. semi-sweet or dark chocolate chips 
  •  Non-stick cooking spray & a muffin baking tray 




Directions: 


1) Preheat your oven to 350 degrees F. Mix the dry ingredients in a medium-sized bowl, reserving half of the chocolate chips to top your muffins. In a separate medium-sized bowl, mix the applesauce & sugar, stir in your 3 egg whites, add your mashed bananas, and water.



2) Slowly pour in your dry ingredients into your wet, and mix until thoroughly combined.

3) Spray your muffin tray with non-stick cooking spray and fill each muffin tin 2/3 full (for medium-sized muffins, that's around 2 large tablespoons- for large, around 3 1/2 large tablespoons).




4) Bake for 20 minutes, or until edges are golden brown and muffins are springy (but still moist to the touch)! Feel free to insert a toothpick if you are unsure. :-) If it comes out clean, they are done. Now top each muffin with 3-5 chocolate chips! :-)

Let your muffins cool, wrap each individually in foil, pop them in the fridge, and they're good to go! :-)
